Zahov is a early maincrop variety for the crisping market. Tubers have good resistance to splitting and some resistance to bruising. Trials have found good resistance to dry rot (F. coeruleum). This variety has low resistance to dry rot (F. sulphureum) and late blight on tubers. Tests for resistance to potato cyst nematode demonstrated resistance to Globodera rostochiensis Ro1 and susceptibility to Globodera pallida Pa 2/3, 1.
